I was able to recover my IG and am grateful that I still have all the photos everyone has sent me through the years.
I just wanted to make some notes that may help you, if this were to happen to you.
Once you have discovered that your IG has been hacked, it's likely that they have changed your email and phone number.
At this point you will be required to send in a video/photo to verify that the account this yours and you are not a robot. I believe this only works if there are photos of yourself in your post, in my case my profile pic is me. Once it is sent there is a message saying that it would take 3-4 days to get back to you. However I got mine back within an hour.
When I signed it, the hacker was still on and changed my settings once again. I was feeling quite discouraged and had to take a mental break from it. After a couple hours I did the video/photo again and was able to sign in and confirmed my email and phone number. So there doesn't seem to be a limit as to how many time you are allowed to send a video/photo.
There is no way to contact IG directly and their help desk is not very helpful.
Modern day problems, right?!

My instagram account was hacked.
Do not respond to any messages sent from my IG. I know they have been mass messaging everyone, I sincerely apologize.
I'm most concerned about others being hacked and not about getting the account back.
Unfortunately IG help support has not been helpful as my email and phone number has been changed. I will continue to try to get back in and will likely delete the account and start a new one. I will miss all the photos you guys sent 💔
